Distill is a popular neighborhood hangout, and I was invited to their Rainbow location for a mixer last night in their event room. Distill provides a fun atmosphere, house-made cocktails, hand-crafted food, and a VIP gaming club, and (being in Las Vegas, of course), they’re open 24/7.
Executive Chef Jeffrey McCarthy presented a variety of menu items, but his favorite (and the crowd favorite) was Beer Can Chicken, a 2–3-pound whole chicken, roasted in cerveza, served with roasted lemon potatoes, charred baby broccoli and cauliflower.

Distill Guinness Burger
Their House Beef Blend, char grilled in a Guinness glaze. With sriracha & Guinness candied bacon, topped with crispy fried red peppers, shredded lettuce, homemade Guinness aioli, on a fresh baked brioche bun
Chili-lime Salad
Grilled chicken seasoned with their chili lime rub and tossed with shredded romaine, Pico de Gallo, avocado, grilled corn, cotija cheese and house made green goddess dressing
IPA Shrimp
Jumbo red Argentine shrimp, slow cooked in their homemade Cajun IPA butter and served with house-baked garlic bread
Not-Chos
Fried Brussels sprouts and cauliflower, pepper jack cheese sauce, Pico de Gallo, pickled red onions, black beans, charred corn, cotija cheese, Avo lime crema. Served with salsa and guacamole
Ahi Poke Stack
Hawaiian marinated Ahi Tuna, layered with fresh avocado Pico blend, avocado lime sour cream, with crispy won ton chips
Bread Pudding
Warm brioche bread baked with their own custard, brown sugar, and candied pecans. Topped with cream vanilla ice cream and maple-amaretto sauce
